- 2 cups of pineapple
- 1 apple
- 3 mint leaves
- 1/2 cup water
This smoothie is incredibly refreshing and cleansing – slightly sweet with a hint of mint. Add some ice and this becomes the perfect summer drink. Heck you could even add a splash of rum and make this a nice summer evening cocktail (*wink*).
Whether you use a blender or smoothie makes no difference, although texture wise they will obviously be different. A blender will retain all of the fiber, especially from the pineapple. When adding ice – if using the blender, I’d recommend adding the ice while blending (about 1 cup of ice), if using the juicer then add the ice to a juice when done juicing. For this particular recipe I used a blender, so feel free to amend accordingly (note: directions for a juicer are exactly the same, except that you would not be adding water, unless it is to temper the sweetness).
Directions
- Add your water and first blend your cut up apple (be sure to remove the core first). Blend until smooth.
- Then add your pineapple and blend until smooth.
- Add your 3 mint leaves last (feel free to add more if you want it more minty, however, be sure to taste it first before adding more – mint is quite powerful).
Enjoy!

Nowadays it's much too easy to gravitate towards junk food when following a gluten free and/or vegan diet.
